Homemade Chicken enchiladas




Around 2 pounds of chicken breast 1 jar of 'Ortega' taco sauce (16 oz) Around 4 tablespoons of brown sugar(more or less depending on your preferences) 1 package of melting cheese 1 package of tortillas  A mix of mild cheddar and mozzarella shredded cheese Directions: First, you will need to pre-heat the oven, and will also need to cook the chicken thoroughly. Then you need to shred the chicken. We used a 'kitchen aid' mixer which is the easiest way. In a separate bowl pour the whole bottle of taco sauce and brown sugar. When you get the brown sugar and taco sauce to taste like you like it. Then, you mix the chicken and sauce up together. When you finish mixing that up you will need to spoon that mixture into the tortillas, and roll them up and put the ends down to the bottom of the pan. After that, you will need to melt the cheese down and put some on top of the enchiladas. Finally, you will sprinkle the shredded cheeses on top, and bake in the oven until the cheese on top is melted. Then dig in!
